The Sea Gardener

The Sea Gardener is based in Tramore, County Waterford, on a stretch of coast where the Copper Coast meets a long sandy bay. It centres on Ireland’s edible seaweeds, combining guided shore foraging with tastings and talks about how these plants are gathered, dried and cooked.

Sessions are as much learning as leisure: you walk the rocks at low tide, learn to identify what grows there, and see how it translates to the kitchen. It appeals to anyone curious about wild food, coastal ecology or Irish culinary traditions.
