The Dining Room at the Gregans Castle Hotel

The Dining Room is the fine-dining restaurant at Gregans Castle Hotel, set in the Burren near Ballyvaughan in County Clare. Overlooking the surrounding karst landscape towards Galway Bay, it offers a relaxed yet elegant setting for lunch and dinner, and is open to non-residents as well as hotel guests. The kitchen is led by chef Jonathan Farrell, whose menus focus on modern, seasonal cooking built around produce from the hotel’s own organic garden alongside local and artisan suppliers. Dishes make regular use of Burren lamb, beef and game, together with fresh Atlantic fish and shellfish. An extensive wine list draws on producers from around the world and includes a good selection of organic and biodynamic bottles. Guests can also relax over a drink in the adjoining Corkscrew Bar, which has an open fire.

The restaurant has earned recognition for its cooking, appearing in the Michelin Guide and holding three AA Rosettes, and it makes a natural stop for visitors exploring the Burren and the wider County Clare coastline.
